The Role:


We are seeking a skilled and detail-oriented Butcher to join our butchery department. Whether working in our retail shop or our production space, you will be a master of your craft who understands that a successful department runs on quality, precision, and data.

This role requires a butcher with the confidence to work across all species and the ability to support the Head Butcher in driving profitability. We want you to be as passionate about whole-animal butchery and high-quality products as we are.


Purpose of the Role


Our Butchers are responsible for executing the daily breakdown of carcasses, ensuring every cut meets our high standards for quality and presentation. You will play a crucial role in maximizing yield, minimizing waste, and ensuring our customers (and our kitchens) receive the very best product Bath has to offer.


Key Responsibilities

● Expertly break down primal and sub-primal cuts with minimal waste.

● Monitor and maintain gross profit margins through precise portion control.

● Ensure compliance with food safety, hygiene, and health regulations.

● Maintain a high standard of merchandising and display (Shop based).

● Assist the Head Butcher in managing stock levels and inventory audits.

● Provide expert advice to customers on cuts and cooking techniques.


Butchery Operations & Production


● Ensure all meat is prepared to high standards, maintaining consistency in weight, appearance, and yield.

● Expertly handle beef, poultry, pork, and value-added products.

● Maintain and improve cutting techniques to ensure maximum value from every carcass.

● Effectively utilize trim and by-products to increase overall department efficiency.

● Oversee mise en place for value-added products and ensure stations are well-stocked and organized.


Stock Management & Yield

● Review production sheets to ensure stock levels are aligned with daily demand.

● Ensure the quality, accuracy, and rotation of stock to minimize "shrink" and maximize freshness.

● Participate in weekly inventory audits to account for product usage and reconcile discrepancies.

● Strictly adhere to portion control specifications to ensure consistent food costs. Compliance, Safety & Security

● Enforce strict hygiene and food safety regulations in line with local health and safety laws.

● Ensure proper checks are being carried out as per our policy and recorded accurately (e.g., temperature logs, cleaning schedules).

● Maintain HACCP (Hazard Analysis and Critical Control Points) standards throughout the production process.

● Diligently follow our Allergen Management Procedures at all times.


Candidate Requirements


Experience: Proven experience as a Butcher in a high-volume retail or wholesale environment.

Technical Skill: Deep knowledge of carcass breakdown, primal cuts, and value-added products.

Analytical Mindset: A strong understanding of yield calculations and how cutting precision impacts GP.

Standards: A commitment to impeccable sanitation, food safety, and presentation.

Communication: Ability to work well within a small team and (if shop-based) engage confidently with the public.
